Quick!!! Cook Something!!
This time of year, the days are long.
Two things are happening. We are working in the gardens or we are sleeping.
Period.
No housekeeping. No entertainment. Little to no laundry.
But guess what?
We are still hungry.
Yea .... we have to eat.
And Honey does not think Cheerios is an appropriate meal for supper.
Oh ... we could order a pizza or grab a sandwich. But we don't do fast food.
Well .... not that kind of fast food.
This is one of my go-to meals during the busy spring season. Thank God, it is also egg season!

This is one of my go-to meals during the busy spring season. Thank God, it is also egg season!
This is a Dutch Baby pancake.
And this .... is my supper saviour.
You can eat them plain.
You can eat them sweet.
You can eat them savory.
This can be the bases of some really good meals.
Preheat your cast iron skillet in a 400 degree oven.
Combine the following:
4 eggs ... at room temperature
3/4 cup of flour
3/4 cup of milk ... at room temperature
Dash of salt
1 tsp. sugar (sweet variety)
1/2 tsp. vanilla (sweet variety)
Beat the ingredients until smooth. You can use a blender but I use a wisk.
Take your heated cast iron skillet and swirl 3 tbsp. butter until melted.
Pour the batter into the skillet and bake for 18 to 20 minutes at 400 degrees.
We have filled them with fruit .... such as sweetened strawberries or blueberries.
Or you can have them savory ... filled with sauted mushrooms .... or creamed ham and peas.... or even cooked greens.
But more importantly ... you can have fast food without going through the drive-thru. I don't have to change my dirty jeans!
And THAT is a win in my book.
